Ingredients

150g Salad Mix
3 tablespoons extra virgin olive oil
Salt and Pepper
1 avocado, quartered and peeled
1 Lebanese Cucumber, quarted lengthways
1 1/2 tablespoons red wine vinegar                                2 tablespoons chives, finely chopped                              1/3 cup Greek natural yoghurt

Method

1. Place the leaves and cucumber in a large bowl.
2. Place the oil, vinegar, salt, grinding of pepper adn half of the chives in a screw-top jar. Shake well to combine. 
3. Pour half of the dressing over the leaves and gently toss to coat in the dressing. Transfer the leaves and cucumber to a platter. 
4. Arrange the avocado on the leaves. Add the yoghurt to the remaining dressing and shake well to combine. 
5. Pour dressing over the salad and scatter with the remaining chives. Serve immediately.
