½ cup olive oil
1 tbsp balsamic vinegar
½ tsp Dijon mustard
½ tsp honey
Salt & pepper
100g Mache
1 firm but ripe pear (sliced thinly)
1 apple (sliced thinly)
¼ cup cranberries
¼ cup toasted hazelnuts, coarsely chopped
¼ cup crumbled feta
Salt & Pepper


  1. To make the vinaigrette, in a small bowl, whisk together the olive oil, vinegar, mustard, honey and salt and pepper to taste.
  2. In a large bowl, combine the mache, pears, apples, cranberries and hazelnuts. Pour the vinaigrette over the salad and toss gently.
  3. Sprinkle with feta and season with salt and pepper.
  4. Serve immediately.
